Checking into our private beachfront cottage in the Beach Village at The Del, we knew we had chosen the perfect destination for our honeymoon. Immediately we found ourselves enveloped luxury and comfort of seaside charm. With our spectacular ocean view we couldn't wait to explore the island and San Diego.

On the first night we took a romantic sunset stroll along the white sand beaches of Coronado Island with soothing sound of the waves breaking.
On our return to the resort we dinned at the resort's world class restaurant, 1500 OCEAN. The restaurant and menu were exquisite, a warm inviting interior with cabana or oceanfront terrace seating. Everything was delectable from the appetizers to desert. Another evening we enjoyed wines from around the world at the ENO, a state of the art wine bar, which combined all of my guiltiest pleasures, wine, cheese, and chocolate.

After indulging in the cuisine we had an amazing time exploring the island on bikes, boats, and surf boards. We feel in love with the island while sailing around the beautiful Coronado Bay. Surfing was our favorite activity and during our week stay, I like to think we're both professionals...well almost.

No vacation would be complete without a luxurious spa experience. The Spa at The Del is without a doubt one of the best spas. Here within this quaint village setting, we really delved into some SoCal rest and relaxation.
Nestled among 400 lush garden acres near the beach in Carlsbad, CA-but miles away from the pressures of the world-this delightful coastal California hotel was a haven of rejuvenation, comfort and escape. We indulged in spa treatments, massages and facials and left completely refreshed and rejuvenated.
We were surrounded by the casual elegance and refined comfort of the resort. Our newly renovated spacious suite was modern yet classic. We have just returned home from Canuoan on a 14 day vacation. This was our second time staying at the Tamarind Beach Hotel. We we returned there because we love the quiet and friendly qualities of the Tamarind. The hotel staff was super attentive and gracious.

We came back for a second time specifically because of the beautiful rooms right on the beach, the cleanliness of the hotel and we most enjoyed Floyd, our beach attendant and Peter, our beach bartender. We never, ever had to ask for anything, they were helpful every minute. They seemed to truly care about our needs and went out of their way to make sure we had a great time.

The staff was so attentive and their service was unparalleled to any other resort we've stayed at. They showed us to our room, the junior Senorita Sonrisa suite in the private residence El Murmullo. Our view from the room was gorgeous. We watched the sun go down over the Zihuatanejo Bay everynight as we enjoyed a nice glass of champagne.

During the day we lounged by one of the plunge pools, took a walk along the bay and enjoyed yoga there at the resort but our favorite activity there was the cooking lessons with chef Antonio! We love Mexican food and discovering the secrets of Mexican cuisine from Chef Antonio was so much fun! We've already tried some of his tips at home.

At night we dined at the resort's restaurant. They had a variety of traditional Mexican dishes for us to choose from and I'll admit that it took me a while to decide what delectable dish I wanted to satisfy my palette each and every time we ate there; we tried breakfast, lunch and dinner and all our meals were divine and mouthwatering. We especially loved the classic ceviche with perfectly crispy tortilla chips, their fish tacos and their margaritas of course!

Our honeymoon at La Casa Que Canta really was the romantic retreat we were looking for. The service, the suite, the food, the amenities were all amazing and we're so glad we decided to go with La Casa Que Canta for our special vacation.

We went to Terranea Resort in Los Angeles in September 2009 with our two young kids; we stayed there for 7 nights. Our stay was magnificent, the service was excellent and all the staff was really friendly and helpful.

Dinner was absolutely delicious and gave a good end to the day. Our Favorite restaurant was Mar’sel. The menu features the finest, freshest, locally-produced organic ingredients available - including a few from Mar'sel's herb garden. It is simple, modern, yet innovative interpretation of California cuisine

The swimming pool was nice and quiet with an amazing view of the Pacific Coast.

We did most of the family activities the resort offers, from competing in a friendly game of bocce ball, exploring tide pools, playing golf, kayaking along the beach cove, zooming down the Resort pool's waterslide to stargazing at night by the outdoor fire pits. Terranea provides "fun, fun, fun" for families.

My husband and I went to the Spa and it was amazing. The concierge walked us to the spa, where Mike and I were brought into a wonderful smelling private room. We were on side by side massage tables and each had our own masseuse. All I can say is that I've had a lot of massages here in the US (most much more expensive), and this was the best I've ever had.

The room service menu was really good for whenever you felt like having a snack. Room cleaners were friendly and helpful in all aspects.

Overall, the stay was awesome. It was relaxing, beautiful and just perfect. We would watch the sunrise every morning and enjoy the sunset in the evenings. It far exceeded our expectations.

When we were planning our honeymoon we couldn't decide where to go. We both wanted a romantic, luxury resort, but John is more of a thrill seeker wanting action and adventure, whereas I love relaxing on the beach. Turtle Bay Resort was just what we were looking for and gave us both the perfect honeymoon escape. Located on five miles of white sand beaches with three bays, the views were breathtaking.

The resort offers beach cottages, villas, and guestrooms all with spectacular ocean views. We chose the romantic beach cottage and from the moment we walked into our cottage we escaped into a haven of Hawaiian luxury. The beach cottages are beautiful, with yellow and copper accents against a backdrop of azure seas. Just as beautiful inside we found walnut floors, 15-foot ceilings, king poster beds, and my personal favorite, the luxurious deep-soak tub. Arriving late afternoon we enjoyed our first sunset while sipping cocktails from our private balcony.

A luxury beach resort, Turtle Bay Resort features two pools, championship golf courses, tennis courts, horseback riding, hiking and mountain bike trails, a surfing school, world-class dining and shopping. As golf fanatics we couldn't wait to play a round at one of the four nearby championship golf courses. After a day of perfecting our swings, we decided to jump in the deliciously warm waters of the Pacific. A sunset swim was the perfect way to unwind before a night out in Maui. Known for its world class dining we had many choices when deciding where to eat, all delicious. Strolling through the streets of the nearby Whalers Village and Lahaina we had our choice of first class restaurants, shopping, and museums.

The clear skies, white sands, and turquoise water of Kaanapali are unforgettable. We couldn't take enough pictures while snorkeling and exploring the live coral reef right outside the hotel. Swimming alongside the dolphins and colorful fish was spectacular!

We were immediately upgraded to an ocean view in the Ali'i Tower, because we had booked our stay as a honeymoon. A bottle of champagne and two glasses awaited us in our room - and what a room! The view is stunning, and the room was classy, comfortable and clean. My husband was happy to find a 32" flat screen TV in the room. (We had to watch the Olympics occasionally) ;)

The resort was built with nature in mind. It blended into the scenery without disrupting the balance and grandeur of nature, while preserving the prehistoric landscape. It rested like a giant eagles nest perched on rocky cliffs overlooking the hypnotic waters of the majestic bay. Man and nature blending their resources to create a mixture of serenity and prestigious comfort. The Royal Kona Resort fulfilled our need for tranquility, entertainment and inspirational bewilderment.

The staff, from the housekeeping to the front staff, and the bar & restaurant wait staff were fantastic! The front desk staff was very friendly and eager to make our stay comfortable; the housekeeping staff was also friendly and very keen on refreshing our towels and cleaning our room as often as possible. The wait staff was friendly and fast, you have to try the "topless mai tai", and I would also recommend the Ono Fish Tacos. We liked to grab the lounger style chairs with the foot rests when we went down for drinks and/or food at Don the Beachcombers. Great place to catch the sunset. :)

We had breakfast once at the buffet at the Royal Kona's restaurant. It was fairly comparable to most breakfast buffets around, price-wise (around $16 per person). The bar fridge came in very handy. The in-room picnics can save a good chunk of cash, for those looking to cut costs on their holiday budget. Lulu's just across the street has a $5 breakfast deal on the weekends. Tasty eats, great price, can beat it!
Mahina Pizza was one of our favorite places for good food at a good price. Pizza, subs, mostly casual fare. The Big Island Grill is a favorite with locals. Delicious food, HUGE portions, and very reasonable prices. Kona Brewery & Pub - worth the wait to get a table. Serious flavor country! Again with the huge portions, pretty reasonable prices, and one heckuva beer! I recommend the Fire Rock Pale Ale. :) The Kona Canoe club is a little more pricey, but not too bad. Great view, conveniently located in the Kona Shopping Village, and they make a mean mai tai. We just had drinks and "pu pu's", a nice place for a light lunch. Bongo Ben's is a good restaurant, delicious food, a bit more expensive, but overall not too bad. Last but not least, we took in "Huggo's Java on the Rocks". I enjoyed kicking off the sandals and being barefoot in the sand while having lunch. Good service and good eats - a nice place to hit up for happy hour.

The grounds are gorgeous! We got a bit snap-happy and couldn't stop taking pictures. It has the look of a luxury resort, without the luxury resort price tag. The lagoon area is really nice, like your own beach on the resort. At times, the public beaches can be rough and more rock than sand (usually in the winter months). Having your own private lagoon was a nice touch. There's a nice beach just a few minutes walk south of the hotel, but you can get pushed around by the waves, keep an eye out for high surf advisories. There was always a lounger available by the pool. Great place to kick back with a book, or for a quick dip without the salt water. The location is perfect. It's right on Ali'i Drive, which is littered with shops, restaurants, some historical points of interest and beaches.

The Royal Kona is the only resort style hotel located this close to the amenities. The other popular hotels, such as the Sheraton, or the Hilton were at least a half hour cab ride away from the downtown area. We didn't need to rent a car at all during our 2 week stay. Which was good, because the car rental companies were sold out for our entire stay.

Luxiorious Fairmont Orchid, Hawaii Big Island

The Fairmont Orchid, Hawaii is located next to Pauoa Bay, a 25-minute drive from the town of Waimea and 22 miles from the Kona airport.

The history of the resort begins hundreds of years ago on the Kohala Coast in a region known as Kalahuipua’a. This is the birthplace of the Hawaiian King Kamehameha I, the king who conquered and united the Hawaiian Islands in the early 19th century. The history of this region is richly preserved in archeological sites, lava formations, and footpaths leading everywhere from burial sites to cave complexes. The first to develop this beautiful region was Francis Hyde I'i Brown, who is often referred to as the last chief; Brown was a descendent of a member of Kamehameha’s army and a superb statesman and athlete during the 1920’s. In 1972 Brown sold the resort to Mauna Lani Resort, and Kalahuipua'a was renamed Mauna Lani, which means “mountains reaching the heavens,” named in reverence to the five volcanic mountains that surround the Kohala region.

Part of the green Mauna Lani oasis, this ocean-front resort occupies 32 acres with its own white-sand beach and 36 holes of championship golf. 540 guestrooms and suites are well-appointed, with garden or ocean views and private lanais. Fairmont Gold concierge floor also available.

An oceanfront restaurant at this resort on the Big Island of Hawaii serves regional cuisine with nightly Hawaiian music and hula shows. Other dining options include a breakfast restaurant, a sushi bar, a Hawaiian cowboy-themed lounge, and a poolside bar.

The resort offers a 10,000-square-foot freeform pool, a sandy children's pool, and two lava-rock spa tubs. Beachside activities include snorkeling, kayaking, surfing, and turtle watching. Spa Without Walls features oceanfront massage cabanas, while a fitness center has cardiovascular equipment and free weights.
The Keiki Aloha children's program provides supervised activities, including arts and crafts, nature walks, and snorkeling. Resort wear, jewelry, and spa products are sold in the resort's boutiques.

Tamarind Cove Barbados

This is the story of our perfect honeymoon. Perfectly us, that is. And far from perfect. Our trip was the exotic escape that we expected. If you are looking for nightlife and bustling activity-this place is not for you. If you want relaxation, privacy, and romance-this place is definitely for you. If you don't like nature-this place isn't for you. If you like bike rides through the lush forest or a hike with the staff botanist this place is for you.

When we pulled up, there was someone waiting to greet us with peach and anise scented towels to cool our faces. We were escorted into the lobby and offered fresh Tamarind Margaritas. We were taken by golf cart on a tour of the grounds.

To our great surprise were upgraded from standard rooms to one bedroom suites at no extra cost. The rooms and maid service were fantastic and could not have asked for better rooms.

Tamarind Cove has two restaurants: Tangiers, which is open for breakfast, lunch and dinner, and the Caribbean-centric, open-air Sasso, open for dinner only, at different times depending on the week. Our favorite restaurant was Sasso. A Bistro you will find inside the Cove. Sasso offers Mediterranean inspired cuisine with a touch of their own. Both the restaurants served great food, although we were only at Taramind for 7 nights, I could see that the menu could NOT get monotonous even if you stayed for 14 nights.

I highly recommend Tamarind! It is truly a peaceful sanctuary. Beautifully designed hotel with all you could wish for!

Kapalua Villas

Maui no ka oi. We all hear it and for most of us, it's very true, Maui is indeed "the best."

I arrived in Maui on a Saturday this year and spent most of the day preparing ourselves for the days ahead.

As I walk into the open and airy lobby of the Kapalua Villas and am greeted by a grand sweeping view of the Maui coastline, ocean and beyond to the islands of Molokai and Lanai. This alone makes me weak in the knees.

The front desk staff was extremely nice and accommodating. The bell staff was very friendly and everyone at this hotel had a wonderful "Aloha" each time I saw them. The room was beautifully furnished and I feel that I got what I paid for. I stayed at the Ridge Villas. Ocean view villas sit on the top of the ridge and offer sweeping views of the Pacific, and the islands of Lanai and Molokai and the distance. In winter, you can see whales playing in the water just off the gorgeous beaches that lie below. You can also see the golf course on the other side, so it's kind of like the best of both worlds.

Everything that you need is nearby. The supermarkets in Napili and Kahana are just a short drive away. You can pick up some groceries, cook your own dinner and eat it outside on the lanai while watching the sunset.

Kapalua Villas Maui does not have an on-site restaurant, but the next-door Kapalua Bay Hotel and Ritz-Carlton Kapalua offer 11 restaurants. You can either walk there, or take a free shuttle. My favorite restaurant was The Banyan Tree (located at Ritz-Carlton Kapalua). This 4-diamond restaurant specializes in "eclectic Pacific cuisine". Food is really extraordinary, it is also a favorite for Sunday Champagne Brunch. Perfect spot for sunset cocktails and dinner

Kapalua is known as one of the finest golf resorts in the world and has the accolades to prove it. Kapalua is ranked in the top 30 of the "Top 100 Golf Resorts in the World, 2003" and listed as one of the "50 Best Golf Resorts in North America" in 2001 and 2002 by Condé Nast Traveler. The resort community is the setting for three award-winning 18-hole golf courses, one of which is home to the PGA Tour's Mercedes Championship each January and all three of which have been named among the top seven courses in Hawaii by Golf Digest.

My favorite part of the trip was with no doubt the fact that I was able to sit under the shade of a tree, looking out over the pineapple plantation and ocean stretched out before me, feeling the warm breeze on my face, far removed from the civilization that exists below me.

Garza Blanca Resort

Globetrotters know how to make the most of their little closets-on-wheels. Here are some tricks to help you maximize space and pack like a pro.

Do laundry a few days early so everything will be clean and ready for action. Have button-down shirts professionally laundered, pressed, and bagged at the dry cleaner so you can just pop them in your suitcase.
Start your packing list a week before you leave. Begin early so that you can add items as you think of them and keep an inventory list should the bag go missing.
When selecting your wardrobe, think coordinating solids, wrinkle-resistant microfibers (Lycra, nylon, spandex, and Tencel), and versatile shoes. Also remember that light-colored fabrics show stains, but they are cooler than dark clothes.
To avoid wrinkles, roll or wrap clothes in tissue paper or lay clothes in the suitcase on their hangers and in plastic dry cleaners bags. Roll -- don't fold! -- wrinkle-happy clothes and pack tightly to minimize wrinkles.
Avoid taking shoes or clothes you've never worn before.
Stuff socks and underwear in shoes or purses to help these items keep their shapes.
Pack an extra bag. If you have a luggage set, pack everything inside the second-largest bag, then put that bag inside the largest bag. When you arrive, feel free to stock up on souvenirs and duty-free goods -- you have an extra bag to carry it all home in! Or, pack an empty duffel to fill with take-home goodies.
Bring items that do double duty: a hair dryer with a curling iron attachment, an alarm clock and radio, a calculator and translation guide.
When you've stuffed your bag to the max, zip it up and tap it on the floor a few times to make extra room.
Don't overstuff! Suitcase zippers may bust en route, or you could exceed airline weight limitations and have to cough up extra dough at the ticket counter.
Unfurl belts and wrap them around the inside of your suitcase.
Share bathroom basics (toothpaste, shampoo, and so on).
Double-bag liquids (air pressure at 30,000 feet can wreak havoc on bottles and tubes).
Pack a suitcase like you would a grocery bag -- heavy items on bottom, lighter ones on top.
Pack all your valuables, one change of clothes, non-perishable snacks, a small bottle of water, and your minimum toiletry needs (at least your toothbrushes and toothpaste) in your carry-on in case your luggage gets delayed.
As soon as you arrive, unpack and hang up your clothes.

Montego Bay: Jamaican Me Crazy!

Since we shared with you in one of our previous posts a little bit of travel info about Jamaica, we thought we'd share with you one of own experiences there as well!

In 2007, my family and I vacationed in Montego Bay at an all-inclusive resort for 7 days. Needless to say, Montego Bay was gorgeous, breathtaking, and the epitome of Rest & Relaxation. The ocean water was pristine and blue and was mere steps from the resort! I couldn't believe it- I was living the life. Imagine seeing this view outside your hotel room all day and everyday. From tanning, eating, jet skiing, kayaking, fishing and then eating again...I was pretty sure I never wanted to leave this paradise.

During our week in Montego Bay, we also took a day out to tour a local pottery factory and actually got to see the artists in action. On top of that we also went to Ochos Rios, a nearby city, to climb the Dunns River Falls!

You're probably thinking the same thing I was: climbing a waterfall?! Yeah right. Don't worry though. It was far from steep and scary but still a little thrilling nonetheless! Just hold onto the person in front of you and make sure to buy some water shoes beforehand. ( You can usually find them in sporting good stores or Target). The Dunns River Falls was probably my favorite part of Montego Bay. If you ever do plan on vacationing here make sure you don't miss out on this!

All in all, Jamaica was beautiful. I'm sure that whichever city you choose would be equally as amazing!

Other must-do's: Try Jamaican Jerk Chicken and Red Stripe Beer.

Greece:

The Greek Islands are an amazing spot to relax. The over 6,000 islands very in size, activities, landscape, pretty much anything you are looking for you can find in these beautiful Mediterranean isles. Crete is the largest and most well known of the islands. It is over 3,000 square feet of bliss. You will most likely fly into the largest city, Herakloin. This is a place to go is you love luxury. The islands are rich in history if you want to do some educational tours as well. If you would like a less traveled island, try any of the Northern Aegean islands ( Chios, Ikaria, Limnos, Lesvos, Samos, Samothraki, and Thassos). These islands have the Greek culture that you are thinking about in your head right now. They are gorgeous, like all the islands, but have a quieter feel. Karpathos is also a quieter island that keeps the traditional Greek atmosphere without being too indulged in tourism. You can still find luxury hotels on the beach here, but it’s not a party town.

But we know what you really want to hear about, how intoxicating the Greek sun and sand combo can be! Some activities that you outdoorsy types will enjoy: scuba diving, snorkeling, sunbathing (of course), shopping, hiking, walks on the many Oceanside trails, trying new cuisine at the diverse cafes and restaurants, donkey rides, walking through old volcanic grounds, visit historical sites (each island offers ruins from Greece’s past). You may also find it interesting to invest some time in checking out local pubs!! Your experiences will be ones which constantly call you back to the islands.

Caribbean Islands:

There are approximately 30 islands for you to enjoy in the Caribbean from Antigua and Barbuda, Jamaica, Aruba, Bahamas, British and American Virgin Islands, Dominican republic, Grenada, Puerto Rico, we think you get the idea. And one of the most appealing attribute for Americans is the location!! These islands are right next door (if you live in Florida), yet the culture takes you a million miles away from the busy cities and quick dinners between errands. If they made that big of an impact on the Beach Boys, imagine what they can do for a honeymoon. Visit our honeymoon site to see some spectacular deals going on now.

The Caribbean’s warm water is a dream come true for those of you who like boating and water sports like water skiing and jet skiing. For you more romantic types, may we suggest a destination wedding in Grenada? The sound of tons of water crashing down a 600 feet clif is just the kind of awe every honeymoon hopes to acquire. You can hike up the waterfalls, or take boats or helicopters if you prefer luxury to an up close attachment with nature.

Or you can visit the Santo Domingo Ruins in the Dominican Republic. There is also a great appreciation for the arts; you can choose from glamorous art galleries and street venders full of culture, or try both! Try to make it to El Conde Street and Plaza Criolla.

No matter which Island or islands you choose to stay on, you will be inspired by Caribbean cuisine, art, architecture, and of course the music and dance! Nothing says celebration like the bright clolors and festive music that can only be found in the Caribbean..

Venice:

July and August are perfect times for you warm weather lovers to travel!! (June and September are a bit cooler, but low 70s are perfect if you don’t like to sweat!) If your wedding plans are for late winder/ early spring, we suggest Venice. Enjoying Mardis Gras in Venetian style is an amazing way to celebrate your new vows! Day trips are an amazing way to take a vacation from your vacation. Head over to Lido Island for a relaxing day of golf; Visit Veneto to avoid the busy Venice weekends and taste some amazing wines; or you could stay local and just take a trip to the different world of the streets ad gondolas!! Or if you like to make friends take a water bus (Vaporetto); I promise you, you will not regret going down the Grand Canal in one of these!

Once-in-a-lifetime finds can be seen all over the Rialto Market!! Find precious jewelry and silks, breathtaking Venetian glass and masks (perfect for you Mardi Gras lovers), and crafts of all kinds. You can spend an entire afternoon browsing if you’d like! It’s near the gorgeously constructed Rialto Bridge. We suggest going down the Grand Canal to get to the market!

Choose the right Hawaian Island for your Personalities!

On the Big Island enjoy the black beaches and romantic waves. This is an amazing time to view water falls from a helicopter as you sip champagne and hold each other’s hands. You will be in for a thrill ride when you fly right next to the 442 ft tall flowing falls of Akaka Waterfalls. If you want to see stars and have an out-of-this-world experience, spend an afternoon or evening at the Mauna Kea Observatory. There are also amazing botanical Gardens in all the Islands that it is definitely a must to stop at one or two!

Go to Kauai and climb through the Kukui, Kalalau, or Kuilau Ridge trails and enjoy the view. You may even want to hop in a kayak and see the secret falls. Or if you prefer the less sweaty method, take an intimate helicopter tour on any of the Islands for a view larger than life. Your hearts will be pounding and you will never forget the sights of the trip. This is a smaller Island so you can see all of it in a one week stay! Oh and don’t be alarmed if you see chickens roaming outside of the airport, or on the mountain tops, even in beach parking lots!

For those of you who connect on the dance floor, Maui is a night owl’s dream!! Here are just a few of our favorite experiences.

At the Hilton Papgayo, there is a three level pool. On the top level you can swim or do some water aerobics. After getting your exercise in, wind down at the Fuenete de Vida Bar. It’s located right inside the pool! So you can just swim right over. INSIDER TIP: In Costa Rica, locals don’t order a “cerveza” they ask for “una bierra.” If you want to try the local beer, ask for an Imperial. Of course the other mixed drinks are tasty too. Nothing beats a margarita or a whisky sour in your bathing suit.

Afterwards, you might want to check out the lower level. There is a volleyball court set up and there’s usually always a game going on. At the lower level they have the best snack bar in the place. The El Bocadillo Snack Bar offers a variety of salads, wraps, and Mexican snacks: nachos, tacos, enchiladas, burritos. Our recommendation: the chicken tacos. The tortillas are made fresh and the veggies are newly harvested. There is also pizza, hamburgers, and a variety of sandwiches for “bocadillo” is Spanish for “sandwich.”

The best way to see the youngest volcano in Costa Rica (as well as one of the top 10 most active in the world!!) is from the view of a secluded bungalow in the Arenal Nayara Hotel. Relax in your patio’s outdoor Jacuzzi and take in the sights and sounds of Costa Rica. You’ll have the best sleep of your life, if you crack the patio door open and allow the sounds of rain, frogs, and crickets to lull you to sleep.

In Search of the Quetzal

The quetzal may be small and pigeon like but it makes up for its stature with audacious plumage: vivid, shimmering green comes alive in the abundant sunlight of Central America flashing emerald to gold back to spectacular green.

While everyone spoke of its beauty, the bird was so elusive that early European naturalists believed the quetzal was just a myth of the Central American natives. Which makes sense since early Mayans and Aztecs worshiped a god called Quetzalcoatl, the Plumed Serpent, and depicted him with a headdress of quetzal feathers. In fact, the bird’s name is derived from quetzalli, an Aztec word meaning “precious” or “beautiful.”

One English naturalist, Osbert Salvin, wrote he was “determined, rain or no rain, to be off to the mountain forests in search of quetzals,to see and shoot which has been a daydream for me ever since I set foot in Central America.” Salvin, the first European ever to record an observation of the bird, noted it was “unequaled for splendour among the birds of the New World,” then he promptly shot it. During the next few decades, thousands of quetzal plumes crossed the Atlantic to adorn fashionable hats of the elite in Paris, Amsterdam, and London.

The Mayans considered killing the bird to be a capital crime, but they too revered its feathers. They were worth more than gold in the Mayan society. Guatemalans were so taken by the bird they named their currency after it. The bird also graces the national shield, flag, postage stamps, along with their money.

Although the Costa Ricans don’t worship the bird with quite as much fervor, the bird is more easily seen in Costa Rica. Especially during breeding season (March-June) when the narcissistic males show off their beautiful tail plumes and scarlet red breast in spiraling skyward flights and dizzing dives causing their tail feathers to ripple behind in part of the courtship ritual. If you can’t make it out for their mating season, try to time your visit during the bird’s meticulous feeding hours, which you can almost set your watch by. They eat insects, small frogs, lizards, and the fruit of the broad-leafed aguacatillo.

Costa Rica: The Honeymoon You've Been Searching For

If you’re looking for more than just basking on the beach for your honeymoon, try Costa Rica. Costa Rica offers a truly unique experience. Most honeymoon spots have a triangular tradeoff: there’s exotic, romantic, and excitement; you can choose two out of three but you can’t have them all. That isn’t true with Costa Rica.

Costa Rica, which literally translates as “Rich Coast,” is located in
Central America between Nicaragua and Panama. It has a rich variety
of plants and animals. While the country has only about 0.1% of the
world’s landmass, it contains 5% of the world’s biodiversity.

We suggest heading to the Corcovado National Park, the park is internationally renowned among ecologists for its biodiversity. You can see everything from big cats to tapirs. Corcovado is also the one park where you can see all four Costa Rican monkey species.

These include the White-headed Capuchin, the Mantled Howler, the Central American Squirrel Monkey (which is only found on the Pacific coast of Costa Rica and a small part of Panama), and the endangered Geoffroy’s Spider Monkey.

There’s also the Tortuguero National Park which, as the name suggests,is full of turtles. It is recognized as the annual nesting place of the endangered green turtle but giant leatherbacks, hawksbills, and loggerhead turtles also nest there.

The lush rainforests are definitely exotic, but you may not find the
mating calls of the howler monkeys to be particularly romantic. In the
middle of paradise, there is room for romance. The beautiful white
sandy beaches are perfect for long strolls in the sunset. Or try a
midnight swim under the stars.

If you’re not one who can still sit long enough to enjoy one of the many relaxing spa treatments available in your resort. There are many activities for thrill-seekers. Try one of the world famous Costa Rica canopy tours. You’re strapped into a harness and glide from tree to tree across a cable just like a flying squirrel. Suggestions for an American Honeymoon

Whether you want to take a camping trip with the family or a romantic get away, vacationing is hard to plan for in the current economy. But just because it’s hard doesn’t mean it isn’t worth it. Studies show that a quick get away keeps the mind alive and rejuvenates the mind, body, and spirit. Researchers suggest getting away from the desk and going for a walk outside, or even out of the office doors to get some coffee if you’re really busy. When in control and not over done, breaks actually improve productivity. What does this mean for you? It means, yes, you SHOULD be planning a trip. Since you’re reading this newsletter and on this blog, you or someone you know is getting married and planning a honeymoon. This month we decided to GO GREEN! We know you are constantly checking your wallet to see how much green is left, but we want you to think about sustainability this issue. The environment and keeping it healthy and beautiful are hot topics of the past few years. Still Going Strong, Still Going Green

Like I mentioned on the previous blog, I found some great online material on sustainability and traveling. After the Article on the Mayakoba and Hacienda, the next article I found was on The Mexico Premiere's site.

This article is especially poignant in that it addresses the issues while encouraging everyone to do there part. It gives a brief history of the recognition of the sustainability of our planet. I was getting excited as I read on!

The way I look at it, when you go on vacation, you want to go to the most beautiful places on Earth, right? Well what makes that stop beautiful? If you really think about what you want in your vacation, you will surely feel the serenity of that exact spot! Try it now! Sit back and hear the waves, trees blowing in wind, or birds calling…

Mexico is a gorgeous place to visit! It’s nice to know that your resort isn’t destroying the natural environment, but helping keep it alive and beautiful. This article highlights the beauty of Mexico and the efforts that are being taken to keep it magnificent for you and your loved ones. Go Green This and Every Vacation

Hi Everyone!

I was just reading a couple of articles online about traveling with our environment in mind. Some of the articles that really caught my eye were online at Travel Weekly by Jeri Clausing and Mexico Premiere by the Mexican Tourism Board. Both are such a great articles and fit in perfectly with our "Go Green" theme this month I couldn't help but share them with you! Please read Clausing's entire Travel Weekly article and The Mexican Tourism Board's article online, but I will summarize some of the great points I found! I decided to separate the posts for easier reading. If you would like to know more about the Mexican Tourism Board’s article see the post “Still Going Strong, Still Going Green.”

Travel Weekly--My favorite part was that it highlights two of my favorite resorts! The Banyan Tree Mayakoba and Hacienda Tres Rios. Like you will find the article mentions, I didn't even realize all the actions are being taken to "Go Green" at these locations!

These hotels are romantically earthy. You are in the heart of nature, feeling intimacy like never before. Most people hate traveling, or going to Islands because they think of the commercialization. Even Florida has sky scrapers and buildings all over the coast line! However, you have the opposite feel at these resorts. The corporate VP of the Americas for Banyan Tree, John Searby states it perfectly, "This is the antithesis of Cancun." Myakoba goes above and beyond the typical resort considerations of sustainability.

Clausing highlights the resort’s efforts of maintaining and improving the surrounding water resources and conservation. Now you can tell your friends you’re doing a lot more than just turning the water off when you brush your teeth—you’re conserving on your vacation. Environmentalists need to vacation in style too after all!

Some of the major issues Clausing highlights are some of the things that you, like I, may not even realize a hotel is doing to stay Green. However, we want you to know the facts; we want you to appreciate all the efforts these resorts are doing to preserve the wilderness.

“

To minimize the resort’s carbon footprint, local materials were used wherever
possible for construction and furnishings. Everything from its cooling plants to
construction techniques were designed to take the environment into account. Although there is plenty of water in Mexico, the resort pumps all of its water from the ocean, then purifies it in a desalination plant rather than drawing water from underground aquifers. The hotel also uses cold water from deep wells to pre-cool its air-conditioning system. The same system then captures the heat from the air-conditioning system to warm water to within 10 degrees of the temperature needed for hot showers.
Parts of the buildings were prefabricated, which helped reduce the amount of equipment on site.
"Normally during construction, animals move away," said Gabriel Santoyo, Tres Rios’ environmental officer. "We had a higher count because we created a new aquatic ecosystem, so now, many migrating birds stop here."
Mazarambroz said Mayakoba had seen a similar increase in birds and wildlife. Santoyo knows there are new birds because part of his job is to constantly monitor the flow of the rivers and lakes as well as the plant and wildlife on the resort grounds and adjoining park.
During construction, the resort rescued 4,000 plants representing 11 endangered or protected species and now maintains a nursery to nurture many of them. It also recycled all construction-related materials, right down to the bottles containing the water consumed by workers.
The resort was developed by Orlando Arroyo Marroquin, whose Sunset Group also owns the Sunset Lagoon Resort & Yacht Club in Cancun, the Sunset Fishermen Spa & Resort in Playa del Carmen and 20 other tourism-related service companies.
Many green features in the guest rooms are not apparent. For instance, there is no slot that requires a key card for the electricity to work. With such systems, Santoyo said, a guest need only leave a business card in the slot to keep the air conditioning and lights running.
Instead, each room has motion detectors that shut things down if there is no
movement within a certain period of time. Likewise, there is no card instructing guests on options for changing towels. The maids in my room left me piles of clean towels, but used towels that were left hanging were not removed.
There are no recycle bins, but resort officials said all trash was sorted before
being taken out.”

Sustainability isn’t just a trend, it is here to stay. Companies globally are recognizing the responsibilities to the environment and wild life. These hotels are two of the first in their industry to take the bull by the horns. They are serious about being green, and are constantly finding new ways to improve the existing policies and practices.

The article starts off:

"RIVIERA MAYA, Mexico-- One of the first hings I noticed when we pulled off the
highway between Cancuna nd Playa del Carmen onto the new Hacienda Tres Rios
resort was the driveway.
Instead of being paved with asphalt or concrete, it was made of crushed limestone, like the paths and roads that serve nearby ancient Mayan ruins. The drive winds through an eco-park of flora, wildlife and rivers, then pulls up to what looks like a typical modern, all-inclusive Riviera Maya resort.
But Tres Rios, like the nearby Mayakoba resort, is anything but typical. Both are examples of a new breed of environmentally conscious resorts being developed around the world. They combine all the creature comforts of traditional four- and five-star hotels with nature and behind-the-scenes technologies that go far beyond the towel-and-sheet reuse programs that until recently defined most hotels’ environmental efforts.
Tres Rios and Mayakoba are hybrids in the world of environmentally friendly
hospitality. They are not eco-resorts in the strict sense of the word, the kind
found in places such as Costa Rica, which tend to supplement electricity needs
with solar power and serve only locally grown foods. But they have incorporated
the latest in green construction, technologies and practices.
By employing water desalination plants, special cooling machines that reduce air-conditioning costs and ultramodern construction techniques such as pilings that enable large hotels to be built over underground rivers without disturbing their flow, these two resorts are transforming development along the Yucatan Peninsula.”
“Javier Aranda Pedrero, director of the Riviera Maya Destination Marketing Office, said that after observing the development of Mayakoba, and then Tres Rios, local, state and federal officials are in the process of writing new development rules for the area.
"Mayakoba is the model," he said, "and the people from Hacienda Tres Rios have worked very, very well with sustainable development of hotels and protecting all the area that they have for mangroves."
While hotel development here, like in much of the world, is in a lull because of the economy, Aranda said he expects it to pick up again in 2010. By then, he said, the government should have new development guidelines based on lessons learned at the two resorts.”

Where Did We Get the Idea of A Honeymoon?

Going on a honeymoon is the first real opportunity to spend time alone as man and wife, but how did this tradition come to be?

Where Did The Idea of Honeymoons Come From?

As all couples know, planning the perfect honeymoon is just as important as planning the wedding day itself. Traditionally the first vacation that you will take as a married couple (and presumably when the couple will consummate the union), a honeymoon has become the period of time where a couple can rest and recharge after going through the stress and excitement of the wedding ceremony. But why do we take these trips? The idea of a honeymoon originates far back in time, and did not originate as the vacation trip we take now.

There are many variations on the story of where the honeymoon began. As far as the word itself goes, the first regular usage in the English language can be dated back to the 16th century. Many stories of how honeymoons came to be report that the idea of a honeymoon started much earlier than that date, but it is hard to tell whether these are fact or fiction.

One idea that is repeated by most people is that the word “honeymoon” was used to describe an ancient Babylonian tradition where the father of the bride would give the groom all the mead (honey wine) he could drink for the first month (moon) of marriage. This was supposed to give the couple a boost to their fertility. While this idea is widely accepted as fact, since the word honeymoon was not used at this time (Babylon fell far before the 16th century), historians cannot be sure that this is where the custom and word honeymoon came from.

Another version comes from Norse beginnings. It is said to loosely be rooted in the word “hjunottsmanathr”. This is not a happy tradition, rather it was said to be necessary as many brides of the time were abducted from other tribes and the groom was required to hide his bride until her family stopped looking for her. Thus, the honeymoon was more of a kidnapping than anything else.

A third idea is that in Northern European cultures, a “moon” was representative of the monthly cycle of the body – and honey was said to represent how sweet the first one of these months was for a married couple. The word was a caution, that future “moons” in the marriage may not be as sweet as the honeymoon.

Although these ancient traditions don’t involve sweet candies, exclusive beaches, exotic foods and wines, and romantic resort suites, we believe in the twenty-first century that some of these things are must haves for every honeymoon couple. Just like everything else in the world, honeymoons have evolved a great deal to become the great romantic getaway of a lifetime in which they are known to be today.

No matter which tradition you choose to believe, one thing is clear: the honeymoon is here to stay. In current times, honeymoons rarely last a full month, and most couples are well aware that the sweet and calming romance of their first married month will have struggles and disputes in the future. Their content to enjoy their honeymoon and married life as it comes.

Titillating Raspberry Coulis

Ingredients:
10 ounces frozen raspberries in syrup, thawed
1 tablespoon orange liqueur or orange juice
Juice of half a lime
1/2 cup frozen or fresh whole raspberries (thawed, if frozen)
Chocolate syrup
Sponge cake

Directions:
1. Place 10 ounces frozen raspberries, orange liqueur or juice, lime juice and fresh raspberries in a blender and puree.

2. Strain sauce through a fine-mesh sieve over a bowl. Smear some paspberry coulis (your fruit sauce) across two dessert plates. Drizzle with chocolate syrup.

3. Set a slice of sponge cake on each and artfully decorate with additional raspberry coulis and chocolate syrup.

4. Eat up!

Hot Pepper Pecans Appetizer

Hot and spicy nuts are the perfect pre-meal snack to make your mouth water for dinner and dessert.

Ingredients:
2 cups large pecan halves - raw from your local natural food store
1/4 cup (1/2 a stick) unsalted butter
1/4 cup reduced-sodium soy sauce
Several dashes hot pepper seasoning

Directions:
1. Preheat oven to 350 degrees F. Melt butter in microwave. Spread pecans in shallow pan or rimmed cookie sheet. Pour melted butter over pecans and stir to coat.

2. Bake for 15 to 20 minutes, stirring several times. Be sure not to overcook. Cooking is all about tastes and smells; use your senses to tell you when they are done!

3. Remove from oven and sprinkle with soy sauce and hot pepper seasoning. Use a broad spatual to turn and coat pecans. Let cool in pan for 5 minutes. Finish cooling on double thickness of paper towels.

Approach routine things, differently. Even if you don’t write it out, most couples have similar Valentine’s checklists. You do the same things, every year. Well you’re going to, or already have married this person. That speaks volumes about your relationship. If you’re going to do dinner, do it on the roof or in the park. If you exchange presents, exchange them in a different manner where the physical presents are not the focus, and the time spent together is the highlight. If you’re going to wear lingerie wear a completely different style. The adventure is really what matters. If you enter the bedroom in your grandmother’s slip, but with a ten surprises coming his way, the slip will be the greatest hit.

We've all had the fight with parking vehicles since we were 16: who's in who's spot, who parked too close to your side, you know your own personal tif's with parking. Instead of parking in your lover's spot this Valentine's, fill the garage with love. If you want to be simple you can fill you garage, or at least the other side, with balloons. Use the weighted sand bags to prevent attack when the garage door opens. If you want to get a little bit romantic, tie a note to the bottom of one or some of the balloons explaining how much your love means. If you want a present involved, tell him or her that there is a piece of jewelry in one of the balloons and they have to guess which one. If you would like study the unique Zambian animals and plants you will see while on safari, the hotel provides a reference library containing more than 300 wildlife books and videos. However, the most exciting and eccentric view you can get is in the base camp in the center of the resort. If you visit Mfuwe Lodge during late November you can view wild elephants roam right through the building and interact with the staff at the reception desk. This 10 elephant herd is wild so the resort insists that guests have something between them and the herd, even though the animals have never harmed anyone.

Why do these same 10 elephants return each year? Mfuwe Lodge happens to have been built next to a mango tree that one family of pachyderms have always visited when the fruit ripens. When they returned one year and found the luxury accommodation in the way, they simply walked through reception. ndy Hogg, 44, director at the Bushcamp Company that runs the Lodge, has lived in South Luangwa National Park since 1982. But in all his years of dealing with wild animals he has never seen such intimate interaction between man and beast. 'This is the only place in the world where elephants freely get so close to humans,' says the 44-year-old. 'The elephants start coming through base camp in late November of each year to eat the mangos from our trees. 'When they are ripe they come through and they stand about for four to six weeks coming back each day or second day to eat the mangos.'So we suggest if you're getting married in the fall, definitely check out Mfuwe Lodge. But make your reservations early because the resort fills up quickly because of the unique experience the elephants bring to the base camp, and the resort as a whole.
